Ingredients:
2 cup(s) onion(s)
6 cup(s) water
2 small apple(s)
1/2 tsp table salt
2 Tbsp olive oil
4 cup(s) butternut squash, peeled, cubed
1 Tbsp ginger root, grated
Instructions
Heat oil over med. Heat and add onions, sauté for 4-5 min.
Add remaining ingredients and simmer for 30 minutes.
Puree until smooth.
Update on this soup: Day 2 of this was even BETTER than day 1!!! I need to bring something else to have with it for my lunch though - I was hungry this afternoon :-)

Made this again last night. Doubled the squash but kept most of the other ing the same and made it 7 servings. If you have a 2 cup serving it's 3 points, 1.5 cup serving is 2 points. I added spicy red pepper flakes, Club House Masala spice and cinnamon and it was even better than the first time!
