For the love of quinoa!

Pin It Have you tried it yet?  You should.  This super grain is one I've blogged about before and I'll never stop singing it's praises!  Some people say it's bland, but really it's just like rice (only much better for you)...plain rice is bland too, but you have to spice it up.  Tonight I cooked it with some Pueblo Bean dip mix from Epicure and some Mrs. Dash spicy blend...yummm  Tonight's accompaniment is roasted vegetables and salmon (BIG piece of salmon...I'm still aiming for 10 points of protein per day...so far I've only had an egg!)  Check out some of the health benefits of quinoa here if you are interested.

I think this is one of the grains with a lower glycemic index which makes it suitable for low carb dieting. Keeping our blood sugar low is good no matter how we have chosen to lose our weight. You are creative with your food. I tend to fall in a rut - maybe I will get some of this stuff. Thanks for the recommendation.

Haha, I don't know how creative I am... the roasted veggies are a staple for my suppertime meal...the only change is usually the protein (chicken, tilapia or salmon usually)and sweet potato. I mixed it up tonight with the quinoa :-) I love the quinoa, but all too often I forget about it! It is great for leftovers though, which is nice... try throwing some in a salad too! If you can find the red quinoa, it's the best...they stopped carrying it where I usually buy my quinoa.

I just bought some quinoa but I have yet to figure out what to make with it. I was going to try it tonight but got too lazy... LOL. I'll have to find some recipies, there is another blogger I follow that puts it in her oatmeal so I think I may give that a try:-)

Just use it anywhere you would rice...no need for any special recipe :-) I throw it in stirfry, salads, serve it as a side dish (add some soya sauce), etc. I've never tried the oatmeal one though... let me know how it turns out!

I just bought some to try!! I was going to use it in paella with saffron, veggies and shrimp.
