Doctored this recipe a bit from one posted on the Epicure Consultants website. Thanks to Heather for sharing this great idea!
PointsPlus™ Value: 1 (3 points+ for 2!)
Servings: 24
Ingredients
4 large egg(s)
1 tsp baking powder
1 cup Splenda
1/2 cup unsweetened cocoa
19 oz canned black beans
1/3 cup chocolate chips
Instructions
Combine everything except chocolate chips in a blender. Blend until
smooth. Fold in your chips. Pour into an 8"square pan (or mini muffin
tins) - SPRAY PAN WELL...these WILL stick. Bake at 350 for 30 mins.
Check after about 20 mins. Sprinkle hot brownies with Epicure’s Maple
Bacon Sea Salt. Enjoy!
Update: these were so good! I got 24 "two bite brownies" out of
this recipe. One brownie is perfect! The puff up nicely in the muffin
tins. I think if making them in a pan, you may want a larger pan than
8", or your brownies might be too thick. You can replace the chocolate
chips with other things - craisins, other dried fruit, coconut... play
around and let me know what you come up with! I'm not a GF person, so I
can't tell you what changing the mix ins will do to the GF status of
this recipe.
