Tonight I made this recipe that I found on
Pinterest -
Crashed Hot Potatoes. I Weight Watcher'd it up a bit by reducing the oil. Instead of covering the pan with oil, I sprayed it with cooking spray. I used 2 tsp of Safflower oil and topped it with rosemary, salt and fresh cracked pepper and a touch of chipotle chili powder. I served it with steamed broccoli and carrots and an amazing salmon fillet that I found at Sobeys tonight...oh my....what an amazing meal!!! I will make these potatoes again (soon). I will probably boil the potatoes for a couple minutes longer.
